Instructions

  • Place cucumber slices in a large bowl and toss with salt. Let them rest for 20–30 minutes to drain excess water.
  • Drain off any liquid, then pat the cucumbers dry with paper towels.
  • In a separate bowl, whisk together soy sauce, rice vinegar, sugar, sesame oil, and minced garlic. Taste and adjust if needed.
  • Combine the cucumbers with the marinade. Add chili flakes or sesame seeds if you like.
  • Cover and refrigerate for at least 15–20 minutes before serving to let the flavors develop.
