Ingredients
  

  • lbs chicken breasts or thighs
  • 2 –3 jalapeños sliced or diced
  • 3 garlic cloves minced
  • ½ cup onion chopped
  • 2 tablespoons cooking oil olive or canola
  • Salt and pepper to taste

Instructions
 

  • Season the chicken with salt and pepper.
  • Sauté aromatics: Heat oil in a skillet over medium-high heat, then add onions and garlic. Cook for about 2 minutes until onions turn translucent.
  • Add chicken: Place chicken in the skillet. Let it cook undisturbed for 3–4 minutes, flip, and cook another 3–4 minutes or until the internal temperature hits 165°F. If it looks dry, add a splash of broth or water.
  • Add jalapeños: Stir in sliced jalapeños during the last few minutes of cooking. Sauté for 2–3 minutes to soften them.
  • Finish: Adjust seasonings. Add optional ingredients like cilantro, cheese, or lime juice. Serve hot.

Notes

Be mindful of your heat preference—removing jalapeño seeds makes the dish milder, while keeping them in amps up the spice.
