Ingredients
  

  • 4 –6 chicken thighs
  • 2 tablespoons fresh lime juice
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • Salt & black pepper to taste

(Optional) ¼ teaspoon cumin or ginger for extra flavor

Instructions
 

  • In a bowl, whisk together lime juice, honey, olive oil, garlic powder, chili powder, paprika, salt, and pepper.
  • Place chicken thighs in a zip-top bag; pour in the marinade and ensure the thighs are well coated. Refrigerate for 30 minutes to 2 hours.
  • Preheat your pellet grill to 225°F and place marinated thighs directly on the grates.
  • Smoke the chicken for about 1 to 1½ hours or until they reach an internal temperature of 165°F.
  • (Optional) Increase the grill temp to 375°F for the final 10 minutes for crispier skin.
  • Let the chicken rest for 5 minutes before serving.
