Ingredients
  

  • 2 pounds ground beef 80/20 lean-to-fat ratio
  • 1 tablespoon salt
  • 2 teaspoons ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon paprika
  • ½ teaspoon ground coriander optional
  • ½ teaspoon red pepper flakes optional
  • ¼ cup ice-cold water

(Optionally add fresh herbs like parsley, oregano, or basil for extra flavor.)

Instructions
 

  • Chill your bowl and any metal utensils for 10–15 minutes.
  • Combine salt, pepper, garlic powder, onion powder, paprika, and other desired spices in a small bowl.
  • Place ground beef in the chilled mixing bowl, sprinkle spice mix on top, and gradually add the ice-cold water while mixing gently.
  • Cook a small test patty to check seasoning. Adjust as needed.
  • Shape into patties or stuff into casings if desired.
  • Refrigerate formed sausages for at least 1 hour (up to overnight) to let flavors meld.
  • Cook to an internal temperature of 160°F via pan-frying, baking, or grilling.
