Ingredients
  

  • 4 –5 medium potatoes about 2 pounds, peeled and cubed
  • 2 tablespoons butter
  • 2 large eggs
  • ¾ cup milk or half-and-half
  • 1 cup shredded cheddar cheese
  • ¼ cup finely chopped chives
  • Salt and pepper to taste

(Optional) Cooked turkey sausage pieces or extra veggies for added flavor

Instructions
 

  • Boil Potatoes: In a pot of cold, lightly salted water, boil cubed potatoes until fork-tender (about 10–12 minutes).
  • Mash & Butter: Drain and return to the pot. Stir in butter, lightly mashing the potatoes to maintain some texture.
  • Combine Wet Ingredients: In a bowl, whisk eggs, milk, salt, and pepper, then add chives.
  • Add Cheese: Fold the shredded cheddar into the potatoes, reserving a bit for topping if desired.
  • Assemble & Bake: Grease a casserole dish, spread the mixture evenly, and top with any reserved cheese. Bake at 375°F (190°C) for about 20–25 minutes, or until the edges turn golden.
  • Serve: Let it cool for about 5 minutes, then slice or scoop and enjoy.
