  • 1 pound of protein chicken breast, lean beef strips, chickpeas (1 can, or tofu)
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 bell peppers sliced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • ¾ teaspoon salt or to taste
  • ½ teaspoon black pepper
  • 2 tablespoons cooking oil olive, avocado, or canola
  • ½ cup broth chicken or vegetable

(Optional) 1 tablespoon tomato paste

(Optional) Fresh herbs (parsley or cilantro)

(Optional) Additional veggies (zucchini, mushrooms, spinach)

Instructions
 

  • Warm Oil: Heat 2 tablespoons of oil in a skillet over medium-high heat.
  • Sauté Aromatics: Add chopped onion; cook for about 3–4 minutes. Stir in minced garlic for another minute.
  • Brown Protein: Add chosen protein. Cook until lightly browned (for meat) or slightly crisped (for chickpeas/tofu).
  • Add Veggies & Spices: Stir in sliced bell peppers, then sprinkle the spice blend. Toast spices briefly.
  • Deglaze & Simmer: Pour in broth; scrape up browned bits. Lower heat, cover, and simmer 10 minutes.
  • Optional Add-Ins: Stir in tomato paste or fresh herbs. Cook 5 more minutes, uncovered, if needed.
  • Taste & Adjust: Season with more salt, pepper, or chili flakes if desired.
  • Serve: Enjoy hot with rice, flatbread, or salad.
