  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup milk dairy or non-dairy
  • ½ cup melted butter or mild vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup shelled pistachios roughly chopped

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Line a 12-cup muffin tin with paper liners or lightly grease each cup.
  • Whisk flour, sugar, baking powder, and salt in a large bowl.
  • In a separate bowl, mix eggs, milk, melted butter, and vanilla.
  • Gently combine wet and dry ingredients; do not overmix.
  • Fold in chopped pistachios (and optional add-ins, if desired).
  • Fill muffin cups three-quarters full.
  • Bake for 18–20 minutes, or until a toothpick comes out clean.
  • Cool in the pan for 5 minutes, then transfer to a wire rack.
